Seitan works great for absorbing marinades! Maybe sometime I will post a recipe for it. I don't personally care for tempeh, but there a ton of different recipes for it. Beans are probably the most diverse in ways you can cook them, and hummus and other bean dips are great for getting a lot of protein.
