Mushroom stew with Sadza recipe

A light, healthy lunch or dinner from Zimbabwe. Easy, tasty and filling.


Recipe:

FOR MUSHROOM STEW:

Olive oil - 2 tablespoons

Mushrooms of choice - about 1 1/2 cups

Tomatoes - 3-4 large

All Purpose seasoning - to taste

Curry powder - to taste

FOR SADZA: White cornmeal (I used yellow in the video) - around 2 cups

Enough cold water to form a paste

Hot water - around 1-2 cups


Step 1: Mix cold water and cornmeal together.

Step 2: Heat up oil in a pan. Add tomatoes and mushrooms.

Step 3: Add hot water to cold water. Cook until thickened.

Step 4: Add seasoning to stew. Cook for about 20-30 minutes.

Step 4: Add more cornmeal to sadza, until thick. Cook another 15 - 20 minutes.

Serve hot.
