Vegan Noodle Kugel RECIPE:

If you've never tried kugel, now is the time! This is a smooth, creamy vegan kugel recipe that tastes just as good as the original! Raisins and apples are great in it, customize it however you like!


Recipe: 2 cups vegan egg-style noodles

About 1 cup vegan sour cream

1 1/2 - 2 teaspoons vanilla extract

1 block firm tofu (can substitute soft or silken tofu)

1/2 cup soymilk (Enough to blend tofu)

1/2 cup raisins (optional)

1 apple chopped (optional, you won't need all of the apple)

1/2 sugar (I used turbinado, you can use any organic sugar)

1/4 cup maple syrup (to taste)


Method: Blend half of the tofu with the soymilk.

Mix in the noodles, vegan sour cream and vanilla.

Stir thoroughly.

Smash the other half of the tofu until it resembles scrambled eggs.

Add this along with the rest of the ingredients.

Spread into a greased pan.

Bake for about 40 minutes at 350 degrees.
