Vegan Oatmeal Quarantine Cookies RECIPE

An great recipe to keep you occupied while stuck at home!


Recipe: 1/2 cup vegan butter or coconut oil (use what you have!)

1 cup sugar of choice (if you are a strict vegan, use only organic sugar)

1/4 cup applesauce (this is ONE of those little shelf stable applesauce lunch cups!)

3 tablespoons agave, maple syrup or honey (if you aren't vegan, again USE WHAT YOU HAVE!)

1-2 tablespoons vanilla extract (if you don't have any, you can use any flavoring you like, cocoa powder, peanut butter, spices, ect)

Pinch of salt

Spices of choice (I used cinnamon and nutmeg, around 1/2 teaspoon of each)

1 1/2 teaspoons baking powder

1 cup flour (again of choice)

1 cup oats

Raisins or nuts (you could use whatever you want! Choc chips would be amazing!)


Step 1: Preheat oven to 350 degrees. Cream "butter" or coconut oil with sugar until light and fluffy. Step 2: Add applesauce, agave, flavoring (vanilla), baking powder and salt. Stir well.

Step 3: Fold in flour and oats. Add mix ins of choice.

Step 4: You can chill the dough if you want or just bake it right away.

Step 5: Bake on a greased baking sheet for about 15 minutes, or until golden brown. (you can bake for slightly longer if you like crispier cookies!)
